Is there some sort of flowchart that tells what tables give input to others? I am looking for some general information. It sure would be helpful to a newb like me.

No flowcharts. You can check out some of the stickies in the ECU analysis sub-forum that describe some the ECU logic. Each table has basic help text as well available in the table's properties.
